  • Cheese Pie with posa cheese(cheese from Kos)

    1 kilo of onions
    1 kilo red (posa) cheese
    1 cup of Oil
    Optional 1-2 eggs

    In the Assumption they made cheese pies with red cheese posa (Katines).

    Slice the onions in a large deep frying pan with some water. When the water is absorbed, add the oil and cook until tender.

    Grate the cheese and add it to the onions. Allow to cool. If we want, we can add an egg in the mixture.

    Knead dough with 1 kg flour, 1 cup oil, half a cup of milk or yogurt, 1 dose of yeast dissolved in a little warm water, a little salt and knead. Knead the Katines in a crescent shape.

    Then we push the perimeter with the closet key (which is well shaped and perforated). In the end we bake them in moderate heat in the oven for about one hour.
